Even today, she continues to craft this culinary masterpiece, and let me tell you, it's nothing short of extraordinary. And a well-tested recipe! The way it gently melts in your mouth, leaving behind a symphony of sweet and tangy flavors, is simply irresistible.

Rhubarb, with its striking pinkish-red stalks, is the unsung hero of springtime produce. Despite its tartness in its raw form, when combined with sugar and baked into a pie, it transforms into a delectable treat that captures the essence of the season. Its unique flavor profile, reminiscent of strawberries with a hint of citrus, is what makes mom's pie so memorable.

Mom's Rhubarb Pie Recipe:

Ingredients:

  • Rhubarb, chopped into pieces to cover the bottom of a pie dish
  • A sprinkle of oats
  • 175g (6 oz) butter, melted
  • 1 dl (about 0.4 cups) sugar
  • 3 dl (about 1.3 cups) all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp vanilla powder

Instructions:

  1. Preheat the oven to 200°C (about 400°F).
  2. Spread the chopped rhubarb evenly over the bottom of a pie dish and sprinkle a layer of oats over it.
  3. In a mixing bowl, combine the melted butter, sugar, flour, baking powder, and vanilla powder until well blended.
  4. Pour the buttery mixture over the rhubarb in the pie dish.
  5. Sprinkle a little more oats on top for added texture.
  6. Bake in the preheated oven for approximately 25 minutes, or until the pie begins to look slightly golden and crispy on top.
  7. Remove from the oven and allow to cool slightly before serving.

Instructions for Making a Rhubarb Leaf Bird Bath:

  1. If you happen to find a beautiful large rhubarb leaf, you can repurpose it to create a charming bird bath.
  2. Begin by creating a small mound of sand in a suitable outdoor location.
  3. Place the rhubarb leaf over the mound of sand and gently press it down to create an impression.
  4. Mix fine cement according to package instructions and carefully cover the leaf with the cement mixture, ensuring it fills the impression of the leaf completely.
  5. Allow the cement to set for about a week. If the weather is warm, remember to water the cement lightly every day to aid in the curing process.
  6. After a week has passed, carefully lift the rhubarb leaf to reveal a beautifully crafted bird bath.
